Know your leaf
Corn Salad:
Also known as Lambs Lettuce or Mâche, these dark green spoon shaped leaves are soft and springy and have a slight nutty, tangy flavour. Corn salad compliments salad mixes or is great to steam and serve as a side vegetable.
Iceberg:
Iceberg is a light green round head of lettuce, with tightly folded crispy leaves. It has a mild, crunchy and refreshing texture. The name Iceberg is derived from the days when it was being shipped and covered in ice to help preserve it.
Radicchio:
As a member of the Chicory family, Radicchio is bitter to taste and has a deep maroon appearance. Like iceberg its leaves are tightly curled to a central core, with characteristic white veins running throughout. Nutritionally, it’s a great source of vitamin C and E, and dietary fibre.
Red Chard:
With it's green ribbed leaves and deep red stalk, Red Chard adds colour to any salad mix. A member of the Swiss Chard family, it comes in many other stem colours and like spinach it can be eaten raw or cooked. It has a distinctly mild earthy flavour.
Rocket:
Rocket is characterised by a bright green jagged edged single leaf, with a very distinctive peppery and mildly bitter flavour. Also know as Ruccola and Roquette, it was a very popular addition in salads with the Romans and believed to originate from Southern Europe. Nutritionally, rocket is a rich source of vitamin C and iron.
Romaine:
Also known as Cos Lettuce, Romaine is a green oval head of tightly packed leaves, with a distinctive rib appearance, which adds to the crunchy, crisp texture. Romaine is believed to be one of the oldest cultivated lettuce crops and is the staple ingredient in the well known Caesar Salad.
Spinach:
Jade green in appearance, Spinach is a tender, delicate leaf, which can be eaten raw or cooked. With a mild creamy texture, spinach compliments many salad mixes and has excellent nutritional benefits, including being rich in iron and calcium.
Watercress:
Native to Europe, Watercress has small oval shaped leaves and a deep green appearance. It has a hot peppery flavour and is used to add crunch to a salad or to simply compliment a meal, such as fish. A proven ‘super food’ watercress is rich in vitamins C, B1, B6, K and E, iron, calcium, magnesium, manganese and zinc.
