Roast Pepper and Goats Cheese Salad
with Balsamic Vinegar Glaze

Ingredients
Crunchy Leaf Mix
Roasted Red Onion
Roasted Red and Yellow Pepper
Courgette
Goats Cheese
Olive Oil

Serves 4

  1. Place 90g of crunchy leaf mix on a plate
  2. Spinkle the roasted red onion, red and yellow pepper and courgette over the leaf mix
  3. Crumble the goats cheese on top and drizzle over an olive oil and balsamic glaze


Black Olives, Chicken and Rocket Pesto Salad

Ingredients
Babyleaf and Red Chard Mix
Tomatoes
Red Onion
Yellow Pepper
Black Olives
Mozzarella Cheese
Chicken
Rocket Pesto
Fresh Basil

Serves 4

  1. Place 90g Babyleaf and Red Chard mix on a plate
  2. Cut 10 Baby Plum Tomatoes in half and scatter on the leaf mix
  3. Slice and add 1 yellow pepper and half a red onion
  4. Add 1 small jar of Black Olives and 1 ball of chopped mozzarella
  5. Mix sliced cooked chicken with rocket pesto and arrange on top
  6. Garnish with fresh basil leaves 

Parma Ham and Melon Salad with Parmesan Cheese

Ingredients
Rocket Salad
Parma Ham
Cantaloupe Melon
Parmesan Cheese
Balsamic Glaze

Serves 4

  1. Place 60g  of crispy leaf mix on a plate
  2. Lay 3 pieces (40g) of Parma Ham on the leaf mix
  3. Add 9 chunks of Cantaloupe Melon (100g)
  4. Scatter with Parmesan Cheese shavings (15g)
  5. Drizzle with a Balsamic glaze
